Bison Bar was the first original BBQ joint in Dublin. They wanted to bring all the smoky BBQ flavour from Southern America to the streets of Dublin. They sent their Head Chef, Oliver Byrne to the states to learn about the craft of BBQ. He spent weeks traveling the southern states from Memphis to Texas to really master the BBQ craft.
As well as learning all the secrets and crafts to BBQ, it was there they picked up their secret weapon- the Southern Pride Smoker. The smoker was so big that they weren’t able to get it through the door, so they had to take down the wall to get into the kitchen. Talk about dedication! They then spend 6weeks trialling and perfecting their meat selection before serving. They treat all their meats with homemade rubs and smoke them for 14 hours before serving. They certainly know how to do BBQ right!
