Enjoy some show-stopping meat free meals this Christmas with Aldi’s wide selection of delicious Vegetarian mains and sides!

Aldi Parnell Street has a new range of luxurious meat-free mains and sides this Christmas so that if you yourself are vegetarian, or have a vegetarian at your dinner table, they won’t be missing out on any festive delicacies this Christmas, with thanks to Aldi.

Available to purchase in Aldi now:

    • Specially Selected Vegetable Roast/Nut Roast – a perfect vegetarian centrepiece. Choose from a Root Vegetable Roast with Camembert Sauce or a Beetroot & Brie Nut Roast with Cranberry Sauce. €3.49
    • Vegan Sausages – choose from Veggie or Sweet Potato. €2.49
    • Vegan Burgers – choose from Beetroot or Sweet Potato. €1.99

    Butternut Squash, Caramelised Onion & Blue Stilton Galette
    Serves 6 | Prep 30 minutes | Cook 55 minutes

    Ingredients:

    • 1 Butternut Squash
    • 3 Red Onions
    • 150g Cashel Blue
    • 3g Fresh Thyme
    • 315g Plain Flour
    • 20ml Balsamic Vinegar
    • 50ml Olive Oil
    • 1 tsp Sugar
    • 120g Salted Butter
    • 150g Greek Style Yogurt
    • 20ml Milk
    • 1 heaped tsp Paprika
    • Sea Salt & Pepper
    • 1 Egg
    •  

    Pre-heat the oven to 200°C. Put flour, salt and 100g butter into a bowl. Rub together. Mix in yogurt and add milk and paprika. Form a ball and refrigerate for 30 minutes. Peel and cut the butternut squash into small chunks. Drizzle over some oil, add salt and pepper and roast for 20 minutes. Melt 20g butter with oil. Chop and fry the onions, add sugar and vinegar. Allow to cool then add to a bowl with grated Stilton and chopped thyme. Roll out the pastry to a 35cm round and place on a baking sheet. Put the mixture over the dough and fold the borders over, leaving the centre open. Brush with egg yolk and milk then bake for 35 minutes. Cut into wedges to serve.

    Vegan Gravy
    Makes 300ml | Prep 10 minutes | Cook 45 minutes

    Ingredients:

    • 1 Celery Stick
    • 1 Carrot
    • 1 Onion
    • 1 Clove of Garlic
    • 100g Chestnut Mushrooms
    • 15ml Rapeseed Oil
    • 35ml Light Soy Sauce
    • 600ml Boiling Water
    • 1 tbsp Paprika
    • 2 tsp Tomato Purée
    • White Pepper
    •  

    Peel the onion and carrot and chop with the celery. Peel and mince the garlic. Add them all to pan with the oil and sauté. Add the water, soy sauce, paprika, tomato purée and pepper. Chop the mushrooms and add. Cover and simmer for 40 minutes. Strain the mix through a sieve and serve.
